I’m a sucker for a good salad with some marinated chicken on top! Salads are the easiest way in my opinion to eat the rainbow. And there are no rules with salads, you can literally do whatever you want; it doesn’t have to make sense to anyone but yourself! You are the creator of your own salads, literally!
And who doesn’t love a good crunch of all the salad components!? The variety of flavors and textures are everything! Tonight, I decided to go with a Honey Harissa Chicken with a salad base filled with just that, a ton of variety – we have spinach, kalamata olives, tomatoes, the creaminess of the feta cheese and the crunch of the pine nuts and the pistachios. And oh my God, the flavor from the honey harissa chicken – I could eat this every night!
And the bonus? The nutrients in just this one bowl of goodness is top notch. And you’re getting between 35-40 grams of protein in each serving!

Remember, healthy doesn’t have to be complicate nor does it have to be a brain buster. This meal took me 30 minutes to make!
Ingredients
- 2 chicken cutlets
- 1 tbsp olive oil
- 1 tbsp avocado oil
- 1–2 tsp harissa paste (adjust to spice preference)
- 1 tsp honey
- 1 tbsp lemon juice
- ½ tsp sea salt
- ¼ tsp black pepper
- 2 cups mixed greens (arugula or spring mix work well)
- ¼ cup tomatoes, diced
- ¼ cup Kalamata olives, diced
- ¼ cup pine nuts
- ¼ cup feta cheese, crumbled
- 2 tbsp pistachios
- ½ avocado, sliced
- 2 tbsp chives, chopped
Instructions
- Heat up a medium size skillet and pour in avocado oil.
- Add chicken cutlets and cook for 5 minutes on each side.
- While your chicken is cooking, whisk together olive oil, harissa paste, honey, lemon juice, salt, and pepper.
- Pour in harissa mixture and cook for another 5 minutes on low-medium heat.
- Assemble salad greens in a large bowl and top with tomato, olives, feta, avocado, chives and nuts.
- Add the harissa chicken on top.
- 7. Drizzle any extra dressing from the chicken over the salad or you can just do an olive oil + balsamic pour for your dressing.
