Southwest Veggie Filled Salad homemade Cilantro Lime Dressing

You won’t want to miss this super easy and beyond delicious nutrient-packed dinner idea! The secret is the sweet potatoes and the homemade dressing. You’ll love it, I promise! Roast the sweet potatoes in advance and this meal can be ready in under 20 minutes.

Salad:

  • Arugula or mixed greens
  • Roasted sweet potatoes (cubed, tossed with olive oil and S+P then roasted at 350 for 30 minutes)
  • Bean of choice
  • Tomatoes, diced
  • Corn (canned or frozen/thawed)
  • Pickled red onions
  • Avocado, sliced
  • Cheese for added protein (optional)
  • Micro greens
  • Cilantro
  • Pepitas (or I just added pecans because they’re my favorite)

Cilantro-Lime Dressing:

  • 1/4 cup olive oil
  • Juice of 1 lime
  • 1 tbsp apple cider vinegar
  • 3 cloves garlic
  • Handful of cilantro
  • Salt & pepper
  • Drizzle of honey
