You won’t want to miss this super easy and beyond delicious nutrient-packed dinner idea! The secret is the sweet potatoes and the homemade dressing. You’ll love it, I promise! Roast the sweet potatoes in advance and this meal can be ready in under 20 minutes.
Salad:
- Arugula or mixed greens
- Roasted sweet potatoes (cubed, tossed with olive oil and S+P then roasted at 350 for 30 minutes)
- Bean of choice
- Tomatoes, diced
- Corn (canned or frozen/thawed)
- Pickled red onions
- Avocado, sliced
- Cheese for added protein (optional)
- Micro greens
- Cilantro
- Pepitas (or I just added pecans because they’re my favorite)
Cilantro-Lime Dressing:
- 1/4 cup olive oil
- Juice of 1 lime
- 1 tbsp apple cider vinegar
- 3 cloves garlic
- Handful of cilantro
- Salt & pepper
- Drizzle of honey
